Nick Malgieri is the retired founder of baking programs at the Institute of Culinary Education in New York City. Author of 12 books about baking and desserts, he is still traveling, teaching, and lecturing on various baking and dessert-related topics. Born to Italian parents, Malgieri has been fascinated by the sweets of Italy since childhood.
Diverse influences have contributed to the origin and development of the many Italian sweets that are traditional specialties in every region in Italy—from the creamy cassata of Sicily to the almond biscotti of Tuscany to the shatteringly crisp sfogliatelle of Naples. Influenced by trade and conquest in the ancient world, availability of ingredients from the New World, and the all-encompassing presence of the Catholic Church, Italian sweets have evolved from their primitive beginnings to become some of the most delicate and complex desserts and pastries anywhere.
